1 cup  brown mustard seeds
2 bottles or cans Kilt Lifter beer
1/2 cup Dijon mustard
1/4 cup honey

1/4 cup brown sugar

1/2 cup apple  cider vinegar

1 teaspoon sea salt

3 egg yolks

Combine mustard seeds and 1 can/bottle of beer then cover and let sit overnight until seeds are soft and have absorbed the beer. Open the second beer (drink half of it) and whisk the remainder together with the Dijon mustard, honey, brown sugar, vinegar, salt and eggs in a medium saucepan. Over medium heat continue whisking the mixture until it thickens.

Once  thickened, remove from heat and cool. Stir in the beer and seed mixture. Refrigerate any leftover mustard.
