1 Lb Denmark Foods’ Diced Chicken Breast
3 C. Broccoli florets
2 C. Brussels Sprouts, quartered
1 C. Asparagus, 1” pieces
1 Small red Onion, thinly sliced
1 Yellow or Red bell pepper, cut into 1” strips
* Add any additional vegetables you like such as broccoli, potatoes, carrots, squash, etc.
1/2 C. soy sauce
3 T. rice wine vinegar
2 T. avocado oil or olive oil
1 T. oyster or Fish Sauce (optional)
1 t. garlic powder
1 t. sesame oil
½ t. fresh ground pepper
¼ t. ginger
Whisk together and marinate chicken in a large bowl for up to 4 hours.
Preheat oven to 425 F. Place empty pan in over to preheat as the hot surface will help to avoid sticking. remove the chicken from the marinade and stir together with the cut vegetables. Use care in removing the hot sheet pan from the oven, loading the chicken and vegetables and return the pan to the oven and bake 15-20 minutes, stirring halfway through until chicken is cooked through and no longer pink.
Bring the remaining marinade to a boil in a small saucepan, cover and turn off heat. Place cooked chicken and veggies in a bowl, pour warm sauce over the top. Serve immediately, with or without rice.
